What do you think the best covers are? Here are a few that immediately come to mind for me...
Hurt - Johnny Cash (Nine Inch Nails) Gin & Juice - The Gourds (Snoop Dogg) Oops I Did It Again - Richard Thompson (Brittney Spears) Common People - William Shatner w/ Joe Jackson (Pulp)
What am I missing?

I've heart "Hurt" and "Oops". Both are fantastic covers. Cash and Richard really take ownership of the songs, and that is made all the better by the fact that, on the face, of it they are reaaly bizarre song choices.
I would have to add a few off the top of my head
"Bring the Noise" - Unholy Trio(Public Enemy) "I Want You Back" - Graham Parker and the Rumour(Jackson 5) "Love is All Around" (theme to the Mary Tyler Moore Show) - Husker Du
Those were just the ones that popped into my head at first. Of course I'd have to throw in the Replacements' cover of Kiss' "Black Diamond" and Camper Van Beethoven's cover of "Photograph" (originally a hit by Ringo Starr)

I'd like to throw a new category into the mix here . . .
The Greatest Cover that Never Was or Covers that are especially suited to a particular band, but it never happened.
For example . . . R.E.M - "Don't Fear the Reaper" (Blue Oyster Cult)
The arpeggiated guitar and rich vocal harmonies of the original make it a perfect fit for R.E.M., particularly when you put it in the context of their Reckonking or Fables era work.

Along the lines of the "greatest cover that never was" I'd nominate another one for R.E.M. -- Simon & Garfunkel's "I Am A Rock". I've been carrying around in my head an imagined version of Michael Stipe singing that over Buck's jangling guitar and Mike Mills's harmonies filling in for Garfunkel for probably 15 years...

Two of my favorite covers are Terry Reid's take on Donovan's "Superlungs my Supergirl" and, of course, Cake's cover of "I will Survive".

Hey Google... I'm going to have to check out Terry Reid. Thanks for the heads up on that one! Agree on the FB Bros' version on 'Wild Horses'. Somedays I'd argue that it's the best thing the Stones ever did. Have you heard the Elvis Costello & Lucinda Williams duet version?

ABSOLUTELY!! Although there is some debate whether it's actually a cover. Some folks contend that Parsons actually wrote the song and just gave it to the Stones. The stories about the origins of the song are various and conflicting.
Both versions are classic. One day, I prefer Jagger's vocals and the next I favor Parson's lilting, almost off-key rendering.
And while we're on the Burritos, ya gotta throw in "To Love Somebody."
